Chef Jack Middleton

For all of his adult life (the better part of a decade), Chef Jack Middleton has been cooking professionally. He attended the Chef Training program at George Brown College in Toronto and completed his 5000-hour apprenticeship at Quatrefoil Restaurant in Dundas ON. He became a Red Seal Certified Chef in 2013 and has continued to grow his skills and passion for cooking since.

Towards the end of 2015, Jack weighed approximately 250lbs and despite his fine-dining background, was subsisting on fast food and pizza. He briefly went on a low-calorie diet and lost 50lbs in a short period of time. Despite the liberation of his weight-loss success, he knew that this kind of lifestyle was not sustainable. During that time his mentor introduced him to the lectures of Gary Yourofsky and films such as Earthlings and Cowspiracy. He realized the way he was eating was harming himself, the planet and other sentient beings and he decided to make a change. Instead of seeing the (meat-based) low-calorie diet to completion, he went vegan on January 1st, 2016 and proceeded to lose another 40lbs in the 8 months following without restricting his diet and without counting calories.
